Copy Kat Cheesecake Factory Key Lime Cheesecake

Do you love everything the Cheesecake Factory makes? I know I do!  This time of year I am all about the citrus.  This Copy Kat Key Lime Cheesecake is just the trick to fulfill those cravings!

I always have this huge guilt hanging over my head whenever we splurge on calories at The Cheesecake Factory.  Each slice of cheesecake there is like 1,000,000 calories! Well maybe not that much but you know it’s really really high.  It’s also why they are really really good!!!

So I came up with a Copy Kat Key Lime Cheesecake that is lightened up a bit.  I used neufchatel cream cheese which has less calories and fat.  You will never know that this is missing any calories!  So full of great key lime and cheesecake flavor!

Are you familiar with key limes?  They are tiny little limes and they are much sweeter and less tart than regular limes.  This is what makes them so great in desserts.  You can drink the juice right from the squeeze without adding any sugar.

You are going to love how creamy and soft this Key Lime Cheesecake is.  The neufchatel cheese bakes up just as well as regular cream cheese and you can feel less guilt.  Unless you want to go full on cream cheese go right ahead.  I am sure that you deserve it!

Zest a little of the rind and top with whipped cream.  You now have a perfect Key Lime Cheesecake that The Cheesecake Factory would be proud to serve in their restaurant!

Ingredients

  • 1 lb of Key Limes
  • 2 packages of graham crackers
  • 1/2 cup {one stick} melted butter
  • 3 8oz. packages softened nufantchel
  • 3 eggs
  • 1 tbsp vanilla
  • 1 cup sugar

Instructions

  1. in a food processor make crumbs of the graham crackers {or put in a ziploc and crush}
  2. juice the key limes save one for zesting
  3. preheat oven to 350
  4. in a mixing bowl combine the crumbs and the melted butter
  5. mix to coat all the crumbs
  6. grease an 8 inch springform pan
  7. press the graham crackers into the bottom and up along the sides
  8. bake the crust for 10 min
  9. remove and set aside
  10. in a mixing bowl cream the sugar and the cheese together
  11. add in the key lime juice
  12. then the 3 eggs
  13. mix till all is combined
  14. pour into prebaked crust and smooth
  15. place back in oven and bake at 350 for 60 min {top should be golden brown}
  16. remove and let sit on counter until room temp
  17. then place in fridge to chill and set {at least 3 hours}
  18. when ready to serve top cheesecake with the zest of one key lime
  19. place little stars of whipped cream around the edges
  20. Serve and Enjoy!
