Flourless Chocolate Cake: A Virtual Baby Shower

A few of her bloggy friends got together to throw her a Virtual Baby Shower. We wanted to celebrate her and her growing family’s joy by baking, making and creating some really fun and yummy treats.

I made Stephanie a flourless chocolate cake. With all the food allergies all our little ones are developing I wanted a wheat free, nut free, fruit seed free treat. Now I realize that littler Asher Jackson won’t be eating this. But whatever Mommy eats right now he will be getting also.

I couldn’t make a treat for Mommy without Chocolate now could I? A rich warm gooey Chocolate treat!

This was the first time I had made this and it was the simplest dessert that I have ever made.  You can go to any 5 star restaurant and this will be on the menu.  I have ordered and eaten this many times.  I always thought that there was some magic trick or complicated process involved.  Nope! It is super easy and super fast! You can have this amazing dessert in 15 min.  Simple ingredients and easy steps have you noshing on this lickity split.

Egg White is the secret to this dessert.  You have a rich chocolate light as air texture to this, much like a souffle but without all the fuss and drama.

Not only is this easy it’s just so darned pretty and impressive to serve.  I chose to sprinkle some powdered sugar on top.  You could also drizzle some more chocolate sauce or some caramel sauce if you desire.


  • 1 egg egg and white separated
  • 1/4 cup sugar
  • 2 tsp dutch cocoa
  • 1 tbs water
  • 1 oz bittersweet chocolate melted {1 square}


  • preheat oven to 425
  • melt the chocolate and set aside to cool
  • spray 4 ramekins with no stick spray
  • in a mixing bowl combine the egg yolk, the sugar, the cocoa and the water
  • whisk until smooth
  • add in the melted chocolate
  • whisk until smooth
  • set aside
  • with a hand mixer beat the egg white until stiff peaks form
  • gently fold in the white to the chocolate mixture
  • pour the batter into equal parts in each ramekin
  • bake for 7 -10 min
  • let cool for 5 min
  • sprinkle powdered sugar on top
  • Enjoy!
