Honey Raspberry Chicken Skewers

Are you ready for Grilling Season? Dust off the grill and run out and get a bag of charcoal because I have a great recipe for you! These Chicken Skewers are out of this world and they are the newest addition to The Plaid and Paisley Original Recipes.  The marinade is really unique with a touch of heat and a sweet tangy glaze.  During my recipe development  process I wanted to create a fun and different way to kick off Summer.  These skewers will be welcome at any gathering.  The flavor combinations are wonderful and the preparation is very simple.  Simple is always best when you are entertaining at a BBQ or just want a low fuss meal for the family.  The ingredient list is full of staples that you have in the kitchen right now.  You can alter the level of heat and sweetness by adjusting the ingredients.  The marinade sits for overnight and really infuses flavor into the meat.  Just look at that bright colorful amazing glaze on top!

I love the great flavor that Charcoal brings to grilled meat.  You don’t have to make skewers out of this.  Just the chicken breast alone would be good.  Actually I think if you used skin on bone in thighs this dish would knock out all other grilled chicken right out of the Ballpark!!!   Unfortunately I live with a husband that is squirmish around anything not skinless boneless white meat.  The juices in the meat and bone would be spectacular and I really recommend trying this. Meat on the bone is not only cheaper per pound it really delivers more flavor.  But Alas I can  not convince my husband…… As a side I made garlic jalapeno potatoes on the grill also.  Microwave your potatoes for 5 min to give them a head start on the cooking.  Dice and make a tin foil packet.  Salt and pepper the potatoes, drizzle olive oil over, dice up a jalapeno, and pop in 5-6 garlic cloves skins on.  Seal the packet have on indirect heat the whole time you cook the chicken.  When you open the packets squeeze the garlic out of the skins. You will have the most delicious potatoes ever!

  • 4 Chicken Breasts boneless for skewers and diced into 2-3″ cubes
  • salt and pepper to season the meat
  • For the marinade:
  • 1/2 cup Raspberry Jam
  • 1 tbsp Dijon Mustard
  • 3 tbsp Champagne Vinegar {you can use white wine vinegar instead}
  • 1/4 cup Honey
  • 1 jalapeno seeded and diced {leave the seeds for more heat}
  • 1 tsp of each salt and pepper
  • For the Glaze:
  • 1 tbsp Honey
  • 3 tbsp Raspberry Jam


  • salt and pepper the chicken and place in a large ziploc baggie
  • in a prep bowl combine all the marinade ingredients and whisk
  • pour over the seasoned chicken breasts
  • seal and refrigerate for 8 hrs min overnight is best.
  • to make the glaze whisk the jam and honey in a bowl
  • When you are ready to grill set your coals or gas to a medium high heat
  • thread the chicken on the skweres
  • cook over direct heat 8 min per side open lid
  • brush the glaze on the meat
  • move the meat to indirect heat closed lid and cook for 5 min
  • turn and glaze the other side and close lid and cook for 5 more min or until done
  • remove from heat
  • Enjoy!
