Oreo Shortbread Cookies

Love Cookies and Cream? I know I do! That’s why I created these Oreo Shortbread Cookies. A perfect combination. I know that you and your family will just flip over these cookies!

I completely adore Shortbread. It is the easiest cookie to make. Even if you have never baked anything in your life, you can still make these without breaking a sweat!

I use a true Scottish Shortbread recipe. I have been making shortbread this way for years and years. I have never not had a successful batch. I love this recipe so much I have it memorized. I don’t even need to look it up. So you have to know that it’s simple enough to memorize. That should make you pretty confident as to how simple these are.

Full of butter and sugar and oh look at all those wonderful bits of Oreo’s!!! I am such an Oreo fan. I can eat an entire sleeve without batting an eye before I realize just how many I have had. {No wonder my jeans feel tight!}

So instead of stuffing my face with a sleeve of Oreo’s I just decided to put them in Shortbread Cookies. A very good decision indeed! I had to fight off the little indians from eating these before I had a chance to take the photos. I wish I could say they lasted longer than a day in this house. But, sadly I can not……. They are all gone!

I can only imagine how amazing these cookies would be crumbled over a bowl of Cookies and Cream Ice Cream!!! In fact that sounds like a great idea!!

When you go to fold in the Oreo’s to the Shortbread dough go lightly on the stirring. The more you stir the darker the dough will get and there won’t be the color definition that gives them this great cookie and cream look.

The dough will be very crumbly. Don’t worry there is enough butter to hold the dough together. You will have use your hands to combine and press out so you can use a cookie cutter. {I used a biscuit cutter for my circles} Just like with sugar cookies you will have to reform the dough to use it all up. Don’t let this step intimidate you. It’s easier than it sounds. The butter does all the work for you!


  • 1 cup butter
  • 1/4 cup packed brown sugar
  • 1/4 cup powdered sugar plus 2 Tbsp
  • 2 cups AP flour
  • 1 sleeve of oreo cookies crushed


  • preheat oven to 325
  • in a mixer combine the brown sugar and butter until light and fluffy
  • add in the powdered sugar and combine
  • slowly add in the flour
  • once all ingredients are combined and a dough is formed
  • fold in the crumbled oreo’s
  • the dough will be very crumbly
  • spread a light dusting of flour on your work surface
  • place the cookie dough on top
  • with your hands press the dough down and together
  • make it a rectangle at least 1/8″ thick
  • using a cookie cutter cut out as many circles as you can
  • place on a cookie sheet
  • take dough and press back together and repeat cutting out and reforming as many times as you need
  • place in oven and cook for 25 min
  • cool on a wire rack
  • Enjoy!
