Peanut Butter Fudge Brownies

I am just going to come out and say this: This has to be the best brownie recipe in the whole wide world!! This is no joke.  I will never use a box mix brownie ever in my whole life again.  Nothing can compare to how rich and fudgey these were.  When I say fudge I mean it! This is nothing short of brownie heaven! This recipe has just been sitting in my folder of 1,000 recipes that I cut out of magazines, it was buried and looked over and forgotten.  I don’t even know which magazine I cut it out of.  It might have been one of my magazines or even one I snuck the recipe out of a magazine in one of the many Dr’s offices I have been to.  So I really don’t know who to credit for this but I can tell you that they are brownie magicians! I have always gotten really good results out of a box mix in the past, yet this recipe blows any box out of the water. Honestly it didn’t take that much longer to whip this up either.  It is well worth the extra step or two.  I mean look at the decadence of this brownie!

See how moist and fudgey and chocolatey this is? There is no Photoshop going on in this picture.  It’s just all yum yum yum yum! Right now I am very sad that they are all gone.  I’m practically drooling remembering how much I loved these.  The secrect to these brownies that makes them so fudgilicious? 4 eggs!! 1 and 1/3 cup of butter! Wow Wee that’s heavy on the fat scale.  But OH SO WORTH IT! Just don’t think about it, that’s what I do. I live in  serious denial. But with these in your mouth who cares?

The crowning achievement to these brownies? The Only Most Amazing Peanut Butter Frosting Ever! Everyone loves peanut butter straight out of the jar.  Now add powdered sugar, butter and vanilla and you have a symphony! {insert Beethoven’s 5th} Just make sure that you have plenty of people to share this with or you could end up eating the whole pan yourself.  I wish I had the metabolism that I could do just that!

Ingredients

  • For the Brownies
  • 1 and 1/3 cups unsalted butter, softened
  • 2 and 2/3 cups sugar
  • 4 eggs
  • 1 tbs vanilla extract
  • 2 cups AP flour
  • 1 cup Dutch Process Cocoa
  • 1/2 tsp salt
  • 1/2 bag of peanut butter chips
  •  
  • For the frosting:
  • 1 cup peanut butter must be smooth
  • 3 tbs unsalted butter softened
  • 2/3 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  • For the Brownies:
  • pre heat oven to 350
  • in a mixer with the paddle attachment
  • cream sugar and butter till light and fluffy
  • beat in eggs and vanilla
  • add in the cocoa and the salt
  • slowly add the flour
  • fold in the peanut butter chips
  • pour into a greased 9×13 pan and bake at 350 for 25 min
  • Let cool completly before frosting
  • For the frosting
  • in the mixer combine all the frosting ingredients
  • spread on cooled brownies
  • Enjoy!
