If your crew likes tacos, or taco salad then I know they will love these. Easy to whip up on a busy weeknight. You can make a bunch for a crowd or just a few for an appetizer.

We made quite a hearty meal of these. These cups couldn’t be easier. It’s a Egg Roll wrapper! Baked and not fried makes it a much healthier option than corn tortilla taco shell.

Some ground beef, taco seasoning, refried beans, cheese, sour cream, salsa. Everything you love about tacos all wrapped up in a neat little cup. These guys make a filling meal with a salad or Spanish rice on the side. They are also quite a showstopping appetizer at a party.

I squeeze a bit of lime on top and garnish with cilantro. Choose your own toppings, olives, corn, or jalapenos. It’s your turn to change things up! Have fun and go wild!
